To shape cookies using a springerle mold: Brush a very light coating of flour onto the dough and your springerle mold. Press the mold firmly into the dough, then remove and cut around the design with a knife or a fluted pastry wheel. Transfer the cut cookies to the prepared baking sheets.

To form cookies, gently press small amounts of dough into the prepared mold, starting at the center and working out, until the mold is full. A: Springerle dough can be refrigerated or frozen – remember to thaw before use! Refrigerated dough may be kept up to 4-5 days. (I most often make the dough, refrigerate it over night, and form the cookies the next morning.) Frozen dough may be kept up to 3 months wrapped airtight in plastic wrap and/or Ziplock bags.
